Chia Seed Pudding Recipe

Serving: 2 servings, about 3/4 cup

Ingredients:

  • 1/2 cup almond milk

  • 1/2 cup coconut milk, canned

  • 1 Tbsp. maple syrup

  • 1 Tbsp. cocoa powder

  • 3 Tbsp. chia seeds

  • 1 tsp. vanilla extract

  • 12 oz. bag of frozen blueberries

Directions:

  1. Place frozen blueberries in pot on stove over low heat. Slightly mash and cook until liquid has reduced, and sauce becomes thickness

  2. Heat coconut milk, almond milk, maple syrup, cocoa powder in a separate pot. Stir until fully combined.

  3. Take off heat and add chia seeds and vanilla extract

  4. Let the mixture sit for a couple minutes stirring occasionally until pudding begins to thicken. You can place in refrigerator to continue to thicken

  5. Mix in 1/2 cup of blueberries and enjoy!
